This is the perfect setting to cook my favorite dish: spaghetti carbonara. I gather all the ingredients—spaghetti, eggs, pancetta, Parmesan cheese, garlic, salt, and pepper. As the spaghetti boils, filling the kitchen with warmth, I start to cook the pancetta in a pan, listening to the sizzle and enjoying the savory aroma. I add minced garlic, which instantly enhances the smell. Once the pancetta is crispy, I whisk together eggs and Parmesan cheese in a bowl. The trickiest part is next: I drain the spaghetti and mix it with the pancetta and garlic. Then, with the pan off the heat, I quickly stir in the egg and cheese mixture. The heat from the pasta creates a creamy, delicious sauce. A sprinkle of salt and pepper, and the dish is ready. The result is a comforting, creamy pasta that tastes like home.

When I was a child, my grandmother once made liver for dinner. I remember sitting at the dining table, staring at the plate in front of me. The liver looked unappealing, and its smell was overwhelming. I took a small bite, and instantly, my taste buds rebelled. The taste was so strong and metallic, and the texture was gritty and off-putting. From that moment, I knew liver and I would never be friends. Even now, just thinking about it brings back that unpleasant memory, and I try to avoid it at all costs.

In my country, we are known for our delicious and diverse cuisine. One of our national dishes is a hearty stew called “Borscht.” Imagine a cold winter evening, the wind howling outside. Inside, the kitchen is warm and inviting, and the scent of simmering vegetables fills the air. Borscht is a vibrant beet soup, rich in color and flavor. It starts with a base of beets, cabbage, potatoes, and carrots, all slowly cooked in a savory broth. The soup is often served with a dollop of sour cream and a sprinkle of fresh dill. Another beloved dish is “Pierogi,” which are dumplings filled with a variety of ingredients like potatoes, cheese, or even fruit. These dumplings are boiled and then often lightly fried to give them a golden, crispy exterior. They are perfect for any occasion and bring a sense of comfort with every bite.
